Penjamah makanan tidak berpenyakit perut, kulit dan penyakit menular lainnya. Periksalah kesehatan secara rutin minimal dua kali setahun, kuku tangan tidak panjang dan harus bersih. Dalam bekerja penjamah makanan harus menggunakan pakaian kerja seperti celemek, penutup rambut, tidak merokok, menggaruk-garuk hidung, dan telinga. Sebelum menjamah makanan dan setelah buang air besar/kecil selalu mencuci tangan dengan sabun dan air bersih yang mengalir. Syarat-syarat penjamah makanan, (Depkes RI, 2003) : 1) Tidak menderita penyakit mudah menular, misalnya : batuk, pilek, influenza, diare, penyakit perut sejenisnya. 2) Menutup luka (pada luka terbuka/bisul atau luka lainnya). 3) Menjaga kebersihan tangan, rambut, kuku dan pakaian. 4) Memakai celemek dan tutup kepala. 5) Mencuci tangan setiap kali hendak menangani makanan. 6) Menjamah makanan harus memakai alat/perlengkapan atau menggunakan alas tangan. 7) Tidak sambil merokok, menggaruk anggota badan (telinga, hidung, mulut atau bagian lainnya). 8) Tidak batuk atau bersin di hadapan makanan jajanan yang disajikan tanpa menutup mulut atau hidung.
