Alga coklat merupakan salah satu sumber daya alam laut yang keberadaannya sangat melimpah di laut Indonesia. Warna alga coklat berasal dari salah satu pigmen dominan alga coklat yaitu fukosantin. Fukosantin memiliki sifat antioksidan yang kuat. Tujuan dari Karya Tulis Ilmiah ini untuk mengetahui hubungan antara suhu, lama pengeringan dan proses ekstraksi terhadap senyawa fukosantin dengan aktivitas antioksidan. Pengeringan menggunakan metode oven dan aktivitas antioksidan di uji dengan penangkapan radikal bebas DPPH (1,1-difenil-2-pikrilhidrazil). Hasil menunjukan nilai IC50 ekstrak fukosantin 37,68 ppm pada suhu 500C selama 4 jam. Hasil ekstraksi dengan pelarut organik polar menunjukan bahwa pelarut metanol dapat mengekstrak fukosantin lebih optimal dibandingkan dengan etanol, DMSO, asetonitril dan aseton. Kandungan fukosantin dengan pelarut metanol adalah 2,6049 mg/g berat kering. Proses pengeringan menggunakan oven pada suhu 500C selama 4 jam dan ekstraksi dengan pelarut metanol dapat meningkatkan kadar senyawa fukosantin dan aktivitas antioksidan.

The color of Brown algae comes from one of the dominant pigment Brown algae that is fukosantin. Fukosantin has a strong antioxidant properties. The aim of this scientific Paper to find out the relationship between temperature, long drying and extraction process of compound fukosantin against with antioxidant activity. Using the method of drying oven and antioxidant activity in test by DPPH free radical's arrest (1.1-diphenyl-2-pikrilhidrazil). The results showed values of IC50 extract fukosantin 37.68 ppm at a temperature of 500C for 4 hours. The results of the extraction with organic solvents polar solvent indicate that methanol can extract more optimal fukosantin compared to ethanol, DMSO, acetonitrile and acetone. The content of fukosantin by solvent methanol is 2.6049 mg/g dry weight.
