Dari beberapa jenis umbi-umbian yang ada di Indonesia, ada beberapa jenis umbi yang pemanfaatannya dalam bidang pangan masih terbatas. Padahal umbi tersebut dapat diolah menjadi bahan pangan yang berkualitas dengan kandungan gizi yang tidak kalah dengan umbi lainnya, seperti umbi garut, umbi gadung, talas, dan umbi iles – iles.
